Undo and redo work across the whole request: typed text in any of its fields, and changes such as a deleted header, a new method, a different body type or a version you switched to. Typing in one field without a pause is one step. Each tab keeps its own history until it's closed (it isn't saved), and undoing back to the saved request makes the tab clean again. Other fields, such as the sidebar search, a response filter or a dialog, undo their own typing.
